Better Bean Burgers

This is a quick post because we are in the middle of a busy holiday weekend.   Our Christmas tree went up tonight and I whipped up a batch of these tasty Better Bean Burgers from Robin Robertson's book Vegan on the Cheap.  They were surprisingly flavourful with so few ingredients - black beans, parsley, red onion, bread crumbs, gluten flour and some salt and pepper.  I was worried they would be boring but I was wrong, I really enjoyed them.  I love trying new veggie burgers so leave me a comment and tell me about your favourites!

And it sounds like my good friend Kathryn over at The Hedgehog in the Kitchen baked up a delicious pumpkin pie for American Thanksgiving.  Keep on cooking Kathryn, you are inspiring me!

  3. Amanda, I will see what I can come up with. I try to limit my gluten intake and am trying to transition a recipe from my gluten-free diet over to vegan-friendly cooking.

    And, these bean burgers look and sound delicious!!! I'm hoping to get "Vegan on the Cheap" for Christmas and will definitely try these as I love bean burgers!

    And, PS, happy holidays! We decorated our tree yesterday, too. And, I must have Christmas on my mind because in that first picture of your bean burgers the red-and-green really stands out for me ;-)

  5. Amanda, I think this type of burger would work without the gluten flour. The recipe called for 3 tablespoons but you could always substitute some other type of flour that worked for you or leave it out. I think the bread crumbs bind it enough. The only difference would be in the chewiness which the gluten provides.

  9. Kika, Vegan on the Cheap has good basic recipes with not a lot of fancy ingredients. I don't think there are any photos either but I think this would be a good staple cookbook for simple food.
