Triple Power Protein Breakfast
I always feel better when I eat a hot cooked breakfast so this morning I decided to make a stir fry with the left-over quinoa in the fridge. Into the pan went onions, red and green peppers, and half a left-over Japanese eggplant which fried for a few minutes in soy sauce. Then I added the triple protein element - cubed tofu, black beans and quinoa with a little vegetable stock. I ended up throwing in a few spices to add a little more flavour but as usual I used too much turmeric which made the dish slightly bitter. It was still very tasty and a very good start to the day accompanied by a fresh fruite smoothie!

ReplyDeleteI am impressed! I am not so adventurous at breakfast time -- I stick with pbj on most days. It looks good for a quick lunch, too.
ReplyDeleteI love PBJ too but it doesn't give me enough energy. I find this type of breakfast lasts a little longer.
ReplyDeleteMy husband has always and will always eat bread for breakfast. He's a good German! He hates American bread, so we are always looking for the "good" bread.

On the weekends we like to buy fresh whole grain baguette as a treat.
ReplyDeleteI know there are lots of recipes with quinoa and fruit in a porridge type dish. I've never tried it like that but I'm sure it's good.
