Spicy Smothered Green Cabbage |
After a few days of indulging in too much Halloween candy, my body was asking for something a little more down to earth and non-sugary. A few friends and I are cooking from Terry Bryant's Vegan Soul Kitchen: Fresh, Healthy, and Creative African-American Cuisineover the next month and today, I started with the simple but delicious Spicy Smothered Green Cabbage. I don't cook cabbage all that often but this dish appealed to me with it's toasted mustard seeds, a hit of spice from red-pepper flakes and it's relatively few ingredients. It was easy to prepare and would make a fantastic side dish for normal people. Of course, I just ate it for breakfast with a cup of tea and my newly invented bean dip on ciabatta which I'll post next week.

ReplyDeleteI'm not a fan of mustard, or probably mustard seeds either (though I do like mustard greens ;-) ) so I'd probably adapt this recipe, but I LOVE cabbage and I don't buy it/make it nearly often enough.

ReplyDeleteLisa, I don't find mustard seeds to taste very much like prepared mustard but I guess that doesn't make much sense does it? You might like this. It's very a simple and tasty way to eat cabbage.
I should be eating cabbage for breakfast; that's a habit I've really struggled to change in recent months, the breakfast thing. It should not be muffin-ish. I know this. It should be cabbage, or something like it. But then there is the lure of the muffin-ness. Or muffin-ish-ness. And I succumb.
ReplyDeleteThe lure of the muffin is very strong. I completely understand that. I find the only problem with eating baked goods for breakfast is that they don't last me very long energy-wise. I do love a hearty breakfast, I just like to mix it up with all types of food.
ReplyDeleteI tend to "do the opposite" of what's typical. I go for the hearty black beans & quinoa or other main type dish for breakfast, and am more likely to the muffin thing (or even more dessert like thing) for dinner or for after dinner.

ReplyDeleteI must really read more on GR as I totally missed this group cooking project!!! -Which is ok, I wouldn't have had the book anyway and no access to it, so I'm learning new recipes from you all! ;)
